An elderberry riff on the French 75 created by Gabe at Bernardus Lodge in Carmel Valley
2 oz London dry gin (Gabe likes Sipsmith)
1 oz fresh lemon juice
3/4 oz oz Carmel Berry Co's Elderberry Syrup
3 oz champagne/sparkling wine or more to taste
1 sprig fresh mint
Shake all ingredients with ice and double strain into a chilled cocktail glass.
Top with champagne or sparkling wine, garnish with a sprig of fresh mint, and enjoy.
